This is a really good and easy variation to tuna salad, and an option that does not have mayo. Eat in a wrap or between two slices of bread!
This is one of my favorite vegetarian sandwiches. Don't skip the peperoncini, as these mild Greek Peppers are what really gives the sandwich a great kick to it.
This makes 1 loaf in a pullman (pain de mie) pan.

Here's a sandwich I made up, inspired by a pretty decent sandwich I ate at the airport, oddly enough. I recommend getting a flavorful pesto, the kind I bought was a bit bland. The tzatziki sauce pulled it through. Also, the flavors meld together quite well when chicken mixture is made overnight or two.
