I made this up on the fly because I was really craving something sweet and I didn't have too many choices in the cupboards. A little Spenda added for a little more sweetness might have been good, but I didn't have any on hand. There are probably lots of additions that would taste great.
These quesadilla appetizers bites are made with chicken and Monterey Jack cheese with a blackberry and chipotle pepper sauce.
Mix peanut butter, sugars, butter, shortening, egg together. Add flour. 3/4 tsp soda, 1/2 tsp baking powder. Bake at 375 for 10 minutes
Not to be enjoyed liberally but as a snack 1 muffin is perfect. I usually make these muffins and keep 5 and give the rest away. They also freeze well if you'd prefer to keep them all rather than share :-)
This recipe can be varied by what spices you want to use. However, you need to make sure you use at least 1 TBS of salt per pound of meat. I would suggest looking up the food safety cautions on the internet for homemade jerky. I do not make my jerky with nitrates because nitrates are poison. You can always refrigerate the jerky if you feel you have not used enough salt to preserve.
When I was a child, my mother would make these chocolates for Christmas. Not her exact recipe but so far the closest (I think). I entered it to calculate the NI for the base (without the extract). She made different flavours with different extracts (orange, cherry, lemon) - Just don't forget the add the NI. She never flattened them, but left them as little balls. Some she even packed the mixture around a marischino cherry and then dipped in chocolate. We always looked forward to Christmas.
