This is a tweaked recipe shared by a Spark friend. It is also my first Spark Recipe, so go easy on me. The nutritional info doesn't match exactly to what I have, but it's pretty close. These muffins are fantastic and I recommend you have plans to freeze or share them so you don't eat them all. Don't be afraid of the whole wheat flour. Due to the bananas these come out moist and delicious, not dry and compact.
This recipe makes about 24 mini muffins or 12 large ones. (It usually seems to make a little more, maybe 28 small ones or 13 large, etc.)

A straightforward hummus that may be augmented with roasted red peppers or olies. Serve with crackers, flat breads or on a pita
Dip strawberries (halved or whole) in vanilla yogurt (Greek might be best, because it's thicker), then putting on a sheet pan lined with parchment or wax paper and freezing. Voila: Yogurt-covered strawberries!
Artichoke Dip is GREAT, hot or cold. Serve it with raw veggies and/or baked pita or tortilla chips!
These are yummy and super easy to make. My kids loved them and they are heathy!
The way I see it is this: Why eat fake food, when you can portion-control the real deal? It's not an every day food, but it will SATISFY, and doesn't taste like styrofoam! ;-)
Fat free cream cheese and mayo make this dip light on calories and fat, but tastes like it's the real thing.
These gluten-free graham crackers are a HIT with everyone! Even my mom, who is very picky about replications of foods that she loves, said these are SO much better than regular!
