My husband got this recipe from this little Italian lady where he goes to buy italian sausage. It is so tasty. The sodium is a bit high but if you use unsalted or low salt broth and tomato options it'll be much better. I hope you enjoy it as much as we did.
This is a wonderfully healthy soup! It is a good healthy hearty soup that holds up well for the next day. A nice blend of rich flavors and yet so simple to make.
Suggestions for changes and additions from are: Double the tomatoes. It is also good with a spicy sausage, like turkey Andouille. Add more garlic and celery. Instead of Swiss chard, use collard greens. Add chipotle chili powder and/or a bit of liquid smoke and some cayenne to taste. It's wonderfully deep in flavor. Plus, a touch of sea salt when serving really brings out the flavors. Add a spicy Mexican tomato sauce call Chili el Pato from the Mexican food section of the grocery store for a little zing. Try sautéing the onions in some red pepper flakes for a little more depth of flavor.

It is a very good soup and hits the spot on cold winter days. I've included this and a few other Olive Garden-inspired recipes on the site for all of our visitors that enjoy eating at the restaurant chain. In my opinion, making these recipes at home makes them even better than the ones you eat at the restaurant! :)
This delicious soup may be low-cal but it is not low-taste!! Its very easy to make and will fill you up!!
Each time I make this it's a little different. You really can play with the amounts of ingredients. This is my base recipe and I tweak from there. You can cut the meat out too but I always use the beef bouillon cubes, you'll want to double or triple your veggies if you're going without the meat.
