An "everything but the kitchen sink"-type soup, we used whatever leftover canned, frozen and fresh vegetables we had at the end of the week. It's great when you've got several odds and ends and you don't want them to go to waste.
This soup can be whipped up in the time it takes to boil potatoes. It is a soup with substance and yet is light enough for a hot summer night. Serve hot or chilled like a vichyssoise.
I like to make up dishes. I made this South Beach style by keeping in mind I wanted 2 cups of veggies including 1/4 c beans and 3 oz protein lean. You can sub any bean for the Mung bean sprouts (if you want) or if you don't want bean in your soup just replace 1/4 of some other low glycemic veggie. Also keep in mind that the garlic, ginger, soy and hot pepper is to taste or sub for another flavor depending on your mood.
Eat all you want and lose weight. Best advice is to suppliment your diet with this soup and ead a LOT of it. Negligible calories, very low fat.

The only thing bad about this soup is cutting up the meat. It takes a long time. So, if you want to save time...ask your butcher to cut it for you. But, you will save money to just buy a roast on sale and cut it yourself. It takes me about 20 minutes of standing and cutting the meat. Then you still have to chop up the onion, the potato, and the carrots. IT IS WORTH IT...this is good and you will have leftovers.
