I made it for Thanksgiving. Very good nutritionally on all levels including taste!
I love sweet potatoes, especially with spices. This recipe has plenty of flavour - the spice combination is reminiscent of pumpkin pie and the maple syrup gives it added sweetness that's more interesting than sugar. It's packed with vitamins for less than 90 calories per serving - go ahead, have seconds!
For just 110 calories, this is a rich, savory, vitamin-packed soup... slightly sweet but with a bit of a kick... and it finishes with a nice smoky flavor... a perfect way to begin your Thanksgiving meal.
This is a delicious pudding which will take the place of a piece of pumpkin pie.

From the November/Deccember 2008 edition of Vegetarian Times this is a recipe that originates from the Moosewood Cafe.
They recommend spooning it onto layers of phyllo, then wrapping it in the same. That's how I made it, but it could as easily be a wonderful dip, sandwich spread, or gravy-like sauce.
All fresh ingredients, no shortcuts. Not-so plain and simply delicious and good for you too!
My favorite way to eat corn. This has not been "healthy-ed down" what-so-ever. You could definitely use healthier sour cream and substitute butter.
This is a very easy recipe! You take a pumpkin quick bread, add a can of pumpkin and 1 C fresh applesauce. Stir and cook!
This is an adult mashed potatoes. I fed it to the kids along with fresh green beans and some pork chops. My husband and I enjoyed it, but the kids weren't thrilled. Oh, well. I would have put another cheese, cream cheese, in it, but I didn't have any. It was still yummy.
Very easy and fast mushroom recipe. All you need is mushrooms, garlic, butter & 9x13 pan.
Steam the 2 steamer Cauliflower bags, and then mash or grate to desired consistency. Pan fry the the bacon, and set aside. To make the cheese sauce: Add 1/2 cup butter, 1/2 cup heavy cream, and cook on med- low, stirring until butter melts. Then add 4 tablespoons of cream cheese and stir well until thoroughly melted and mixed. Then add 2 cups sharp cheddar cheese. Once that is all mixed, add bacon pieces. Combine well and mix in the cauliflower.
