This is the Libbys Pumpkin recipe w/ stevia packets instead of sugar and heavy whipping cream (0 carb) instead of milk.
For 1/8th of a 2" deep dish round pie dish.

Not my recipe. For pumpkin pie use Libbys 15 oz can recipe and sub heavy cream for the evap. milk and Splenda for the sugar--add eggs last so you can taste the filling for sweetness and spices--you may want less splenda or more spices. 1/8 can is about 3 net carbs.
This soup has a striking color and the sweet, spicy, smooth texture with bits of corn and meat. Easily made vegetarian, if you wish. GF and Lactose free.

It doesn't get any easier than this! The original recipe called for 2 cups of brown sugar I cut that in half due to diabetes in the family and it tasted great.
This is an awesome recipe, which I modified but did not invent. Credit goes to Helene Samuel from France via Dorie Greenspan. You can change this recipe in lots of fun ways, including substituting rice for bread or adding hearty greens, etc. This is similar to the classic version, but the pepper has been removed.
