I cut some caloric corners. Almond milk instead of heavy cream. Super light cheese instead of Gruyere. Acorn squash to help add more nutrients than traditional Gratin. Thoroughly scrubbed potatoes and squash so the skin could be left intact.

This is a variation of the Libby's Famous Pumpkin Pie out of the Nestle hloiday cookbook. It is made with fresh pumkin not canned. and splenda, it is very Yummy.
I adapted this recipe to be lower fat and less calories than one I found online, and made them in a muffin tin for portion control. The only thing I didn't reduce was the eggs, but that was just so the pies could have that complete protein. If you're watching fat or cholestoral, feel free to substitute 6 egg whites! I chose phyllo dough for its natural lightness while remaining flaky and delicious.
These may seem very cupcake-like, but they're still best enjoyed with a fork as they will be quite soft inside! Serve plain or with some low fat whipped cream or vanilla ice cream for a special treat.
This is *not* low sodium--next time, I'll leave the sausages out altogether, and either find canned tomatoes in a more reasonable range, or use fresh--but it is about as low-carb and low-fat as I know how to make it. (I usually only have it on holidays.)
