I wanted to use up some Brazil nuts and some leftover tofu so I created this recipe. These are filling, nutritious and tasty.
Like most veggie burgers they do not retain their integrity as well as a hamburger does inside a bun but I don't mind a bit of a mess.

Made this tonight for my daughter and I, along side one containing ground beef for the guys. Taste was good, but I think next time I will saute the mushrooms with some onion, garlic, and italian seasoning in cooking spray first - the fresh mushrooms made our vegetarian lasagna too soupy when they leached their liquid into the sauce, and I think that the extra seasoning will really add to the flavor.

I used quick cooking oats in the microwave, but this can just as easily be made with an instant pack (microwave so the apples cook!) or with old fashioned rolled oats on the stove or the night before in a slow cooker.

I used red onion, yellow pepper, and the white and black beans - try your favorite savory veggies and beans, you can also add some fresh tomato at the end of the saute, or canned in with the beans. Spicier? add more cayenne or add jalapeno or habanero peppers to the saute. Less Spicy? reduce the cayenne and/or green chili's.
Adjust the amount of water depending on how "soupy" or thick you want your chili.
