I made this big batch of vegetarian chili on the weekend and had it in my lunches all week long!
I came up with this recipe to lighten up one of my favorite meals quiche with a cup of soup. You really only taste the broccoli and Cheddar!! I've also used spinach and skim mozzarella - So delicious!
Although the cooking time is long, most is for caramelizing the onion (40-50min). The process doesn't require constant attention. You can also just saute the onion for a few minutes. You can also cut the fat and calories by a TON by not including the mozzarella and eating it from the skillet instead.
This has Tuna listed in the ingredients, it does not make the lasagne "fishy", if you want vegetarian leave out the tuna and add another vegetable ie eggplant, butternut etc.
