Subtitute celery for broccoli if you don't like broccoli, or regular potatoes for sweet potatoes. But good just as it is!

Tasty, low calorie quesadillas! High in fiber, protein and taste.

*Add peppers, broccoli, or another vegetable to amp up the health value. You can "healthy sautee" most vegetables in with the Quorn tenders and water (see below).

*I use Kraft's Fat Free Shredded Mozzarella and Cheddar cheeses because they are the only fat free shredded cheeses at my grocery store.

*Due to the limited nutrition information on these brands' nutrition labels, the recipe has more potassium and other wonderful nutrients than are calculated.*
