Since most of my family are diabetics I modified this common recipe to take out as much sugar as possible and keep the sinfully good taste! After this has set in the refrigerator over night it tastes as indulgent as a full-calorie diet killer chocolate eclair!

Absolutely unreal in ease, presentation and taste, there is no way anyone will believe the low calorie count or that the "cake" is simple graham crackers.

I based this on another recipe on Spark, but used lite cool whip and sugar-free pudding. Next time, I would use less cool whip, skip the third layer of graham crackers and just drizzle melted chocolate over the top.

This makes a very light "sinful tasting" dessert. It's amazing how the graham cracker absorbs just enough moisture to create a cake-like texture yet still holds the graham cracker fimness.
