Growing up it seemed potato salad was a staple in many of our meals. We lived on a farm, and had a huge potato field which equates into a whopping bunch of potatoes! This salad is served warm (warm salads are a favourite of mine) & is seriously delicious when mixed & served with homemade mayo. The warm & creamy texture will definitely fool your taste buds into thinking, holy cow, this is healthy??!! This recipe was created as a healthier version, of the classic potato salad, which is loaded with a lot more fat & unwanted calories. It is super easy & quick to make & I can safely say you will not want to go back to the potato salad of old! Summer is just around the corner, which means BBQ's, picnics & summer parties.
