A spicy dish of tofu and ground pork. It's really hot, but can cure that Asian craving with too much guilt. This is my version, which I've developed after trying several recipes. It's one that you can't really mess up. If you don't like a seasoning, ditch it. I recommend trying the black bean sauce or paste, though. It's divine.

Chicken with Bok Choy (it falls under the category of comfort food for me)
I am a huge fan of ramen. I am -not- a huge fan of the seasoning packets that -come- with the ramen, though. After having had real, Japanese ramen, it's hard to stomach those blah packet-flavors, and they're so, so salty. And thus, this is one ramen broth recipe I'd found (and have heavily modified) to make one of the huge bowls of Japanese-style miso-flavored ramen that I love so well.
NOTE: This does -not- include the calories for the noodles themselves! You can use basic packaged ramen noodles, or soba noodles, rice noodles... basically, anything you prefer to use is good. Or you can leave them out entirely. The choice is up to you!
I made this on a whim because I was tasting a crunchy, colorful salad... feel free to add more of what you love and less of what you hate. I used frozen edamame which I cooked according to the package and shelled. I also used bagged shredded cabbage to cut down on prep time.
The base for this recipe is a combination of two Beef Tomato Recipes from "Favorite Island Cookery" C. 1975. Instead of tomatoes and peppers, my mother would make it with broccoli and onions for Beef and Broccoli. There have been tweeks and changes made to the original, to remove MSG with out losing taste.
