This recipe is from Cooking Light Magazine. It's a staple in my house and a truly unique and yummy meal.
Adapted from Taste of Home Simple and Delicious cookbook. My husband likes extra sauce so I doubled the marinade and added extra vegetables.
Sometimes the simplest things are the most enjoyable. This dish is very high in Vitamin A, Vitamin C and has good amounts of copper and magnesium! Warning: The cashews contribute nearly half the calories.
Almonds or peanuts would work too and ff you want you could jazz it up a bit with a little freshly grated ginger and a shake of chili pepper flakes.
This is one of my favorite recipes to cook because it's quick and easy. I've had MANY compliments on this dish and I hope you do too!
A quick stir fry with lightly sweetened soy sauce. Serve with a bed of hot cooked rice if desired.

I don't add these, but the recipe also calls for 1 tsp sesame seed oil, 1/3 cup slivered almonds, 2 packages of Ramen Noodles plus their seasoning packets
I substituted corn syrup with honey. only because I forgot to buy it and had honey at home. lol
This is a delicious cold salad with udon noodles and cabbage. Really delicious for a warm evening. Leave out the chicken for vegetarians or sub in shrimp instead.
