Found this recipe in the 90's and have tweaked it over the years to suit the tastes in our household. This is our favorite version.
Very satisfying and high in protein; great for mid-day or late brunch!
Tuscan-inspired, protein-rich, good for using up leftovers from last night's dinner. Feel free to add whatever other veggies you like to spice it up even more! Occationally I will place the scramble on a toasted whole-wheat English Muffin. Also wonderful, but watch the additional calories.
Delicious french toast baked in a muffin tin. Makes 10 french toast muffins. Quick, easy breakfast that my kids both loved. Top with whatever you have in the house (fruit, syrup, honey, nuts, granola, whipped cream, etc.)
Entered mainly for calcuations, since it was a variation of our usual veggie frittata!
A delicious slightly eggy muffin -- decadent chocolate flavor at breakfast, without totally exceeding a reasonable carb count!
This can be prepared the night before, set in fridge, then baked in the morning.
Beat Butter and sugar until fluffy. Beat in egg, blend in milk. Mix together four, salt and baking powder. Add to egg mixture until blended. Mix in berries. Place heaping tablespoons into muffin tins whcih has been greased and floured. Add topping. Bake 30 minutes at 375 degrees.
