This sandwich was inspired by a similar dish I have enjoyed at D'Amico & Sons restaurant in Minnesota. Fresh basil leaves give this sandwich a different, but very good, taste.

These easy fish cakes use canned tuna as a main ingredient. I have omitted the bread crumbs and use eggs as a binding agent.
The spices are just a suggestion, put whateve spices you like in to suit your taste.
Suggestion: Mix all ingredients except the egg in at first. You can "taste test" the resulting mixture as the tuna is fully cooked.

This was originally a Publix recipe that I altered just a bit by adding more vegetables and using Dreamfield pasta instead of regular pasta. Dreamfield pasta, if you aren't familiar with it, is very diabetic friendly, with a low glycemic value. Pasta was something that had all but been cut out of our lives, both of us being diabetics, but no more. Total cooking and prep time, about 30 minutes if you chop the veggies yourself (instead of buying them already prepared).

This is a variation of a recipe I found on a recipe website. We love mushrooms and eat lower sodium, so the modification halves the sodium without sacrificing taste and adds more vegetables
I love red clam sauce - the more garlic, the better! I serve this over pasta (fresh is best).
