I adapted a high fat, high sugar recipe to be healthier with applesauce and less sugar and no wheat flour
The title says it all :) This has lots of potassium, vitamins A and C, folate, some manganese (which help assimilate your B vitamins).
Don't feel left out this Thanksgiving if you are on a gluten-free or vegan diet! I don't measure seasonings, so use discretion here.
Vite-Mix recipe, was very nice when warm and fresh, dries out pretty soon, was a bit gritty. It may need to be mixed with other gluten free flours to last longer or be less gritty. I'll experiment and edit recipee as necessary.

Makes two dozen Muffins
Substitute applesauce for oil. May use sugar substitute instead of brown sugar will save 15 calories per muffin. Use of one less banana will save an additional 7 - 10 calories per muffin. Instead of 87 calories per muffin this alteration to recipe would lower each muffin to approximately to 62 calories.
