So simple this can hardly be considered a recipe - it's inspired by my trip to Niagara Falls where Andrew (my fiance) bought a bag of them from Sugar Mountain and loved them.
Taken from Laurel's Kitchen. Modified with extra half cup of flour to substitue for 1/2 cup wheat germ. Optional to add nuts and dates)
8x8 pan or bread loaf. cup cakes also (bake for shorter time)
Tasty, low calorie quesadillas! High in fiber, protein and taste.
*Add peppers, broccoli, or another vegetable to amp up the health value. You can "healthy sautee" most vegetables in with the Quorn tenders and water (see below).
*I use Kraft's Fat Free Shredded Mozzarella and Cheddar cheeses because they are the only fat free shredded cheeses at my grocery store.

This delicious bread is low in fat and sodium, and is lower in sugar than most banana breads.... and it even has fiber! You might be surprised to find out that it actually tastes great!

Still experimenting with this recipe I created to get the perfect combo of PB and chocolate. (This variation has very little chocolate flavor.) I'll keep working with it and edit the recipe once I get the ratio just right.
