This is loaded with nutrients and great for lunch. Omit the tuna for vegan, traditionally this is made with white beans, but I had soy on hand.
Easy, low cal and filling! I think the sodium is much lower, but this is the best I could do with the calculator. Salt the vegetables when you saute them and they will cook faster. I also sprinkle with sea salt when I serve.
Can be spread with 1 lb of frosting, but calculate nutrients seperately.
This blend of brown and white rice is a nice compromise for my kids, who prefer boxed rice pilaf, which is full of crazy ingredients. I haven't yet found a flavorful brown rice and a white rice with the same cooking time, so this is done in two steps. Real chicken broth is the best choice, but I was out today so calculated the recipe using bouillon and broth. Fresh garlic, onion and parsley are, IMO, better than dried but dried gives my kids the "boxed" texture and flavor that they like and is quick and easy. You can also use broken pieces of vermicelli or even spaghetti in place of the orzo.

Easy and virtually fat-free.
This is a modification of a recipe I found in a Lactose Free Cookbook - the yogurt has to have active cultures for LI people. I use all frozen fruit (the banana and the raspberries too).
Lean ground beef, lima beans, tomato and onion blended in slow cooker to make a hearty and high-fiber dish for 6.
family sized kugel, bake in a baking paper lined 9x12x3" pan. makes 20 2x2x2" portions. homemade (spelt) challah crumbs really make this simple dish taste delicious.
These chocolate chip waffles never fail to put a smile on everyone's face! Best served with chocolate syrup (or real maple syrup) and a tall glass of orange juice.
