This is a copy of the Whole Foods curried cauliflower salad. The whole foods version also uses peas.
I needed to punch up my dry coleslaw for the MRC diet, which requires low carbs, cals and fat. I found that vegan mayo has the least of these offenders, the rest of the ingredients are low naturally. Love the flavor better than normal coleslaw.
