I've listed the ingredients to the best accuracy I can. I just sort of chopped and sliced until the amount of veggies looked right. I measured the olive oil, lime juice, and spices accurately, though, but you can add more or less olive oil, lime juice, and/or spices to taste.
In this recipe low calorie cauliflower stands in for the higher calorie grains that are usually used in this type of salad.

This is the best tasting Ranch dressing we've found. We didn't care for it with low-fat mayo, but that could have been the brand down here. I will try it again and post results.
