This is my favorite version of chili out there. It's 100% vegetarian with the tofu and black beans, but just as satisfying as a regular chili.
I love soup but I can’t have canned soup because of the sodium so I have to make my own.
I took a mostly vegetarian recipe (because the ingredients looked great), and added extra lean ground beef because my family loves the beef in chili.
I used my grandson's little pumpkin and a cast-off halloween pumkin - waste not, want not. It just happened to be 7 cups of pumpkin. You can change it up! When looking for soup stock, I was appalled at the amount of sodium even the "low-sodium" stock had - until I found Wegman's veggie stock!
My daughter says it tastes like a black bean burrito with lots of tomatoes. The hominy adds a nice flavor, likened to a corn tortilla.
So...good. You will need an immersion blender or at least a regular blender to make this soup!
Had some coconut milk that I had to use somehow, since it wasn't "doing it" for the kids as a milk replacement. Hm. Curried something! WIN!
It's not authentic Indian food, but it has the flavors one would associate with Indian cuisine.
A variation of a red posole recipe I found on the net. The color is beautiful and it can be as spicy or as mild as you like depending on the peppers you use.
This is a beautiful delicate flavoured soup which I make with celeriac, a turnip like vegetable with a delicate taste of celery, you can substitute turnip but it tastes better if you can use the celeriac. I vary the taste by adding different herbs and a little all-purpose seasoning and I partially liquidize it so there are still some chunks of veg.
