I have tried to eliminate white sugar and artificial sweeteners from my diet...which means no more of my beloved fancy Starbucks drinks. So...I went on a quest and came up with this syrup. Add it to whole milk and espresso and you have a nice mocha!
I got this recipe (the filling) from a great cookbook by Julie Badger Jensen. The first time I made it, I didn't tell anyone it was zucchini; they all thought it was apple, and kept commenting on how delicious it was! A bit high in calories, but so VERY tasty! I've adjusted the original recipe a bit by using Splenda (or other substitute sweeteners) instead of sugar, but sugar can be used (equal measurement) for the same delicious results! (About 100 calories more per serving)
This was an adaptation to a Cooking Light Recipe from a few years ago. These are great because they are light but yet filling. The ingredients can be substituted for any type of dietary needs (whole wheat can be replaced by flour, splenda for sugar, etc.)
Put all ingredients (except chocolate chips) into a food processor or blender and blend till oats are ground and mixture is smooth.
Place mixture in a bowl and stir in 1/2 of the chocolate chips.
Scoop into greased mini muffin pan, top with a few chocolate chips on top and bake at 350 for 12-14 min.
Cool before removing from pan.
Whole grains, no sugar or fat added. These are dense and moist and make a great breakfast.
