This "dummies guide" version of pumpkin soup is very easy with very few ingredients. I couldn't find a recipe easy enough for me to make when I was sick, so I just made one up myself. All the ingredients are approximations, so if you only have 14.5 oz. Chicken Broth instead of 16, or if you only have a 15 oz. can of Pumpkin, it's ok. Also, season to taste. I don't like a lot of seasoning, but maybe you do. Ramp it up if you like. Can be served steaming or chilled, separation is normal
After making a full fat pumpkin cheesecake for a family gathering, I came up with this low fat, low calorie version for myself. I was impressed with how satisfying it was!
Saw this recipe on the local news, from a local restaurant. It looked so yummy, and without all the butter and brown sugar that usually accompanies candied yam casseroles. It smells so good and tastes even better!!!
