Basically I took random things I had in the fridge and pantry and made this. But it turned out really yummy!
I served this with 1 cup dry brown rice simmered with 1.5 cups water and .5 cup "juice" from a can of diced tomatoes (holding back chunks). I then added a cup of the diced tomatoes after simmering the rice for 40 minutes and added salt, pepper, cayenne pepper, granulated garlic and Pampered chef southwest seasoning.
The elimination of Bread in the recipe lowers the carbs. 2 cups would be a dinner serving, or 1 cup for lunch
Chia seeds are a complete protein and they are so immensely filling! This curbs my dessert cravings as well as keeping me feeling full for a nice long time!
This is an adaptation of Rachael Ray's Roasted Vegetable Dip. The original recipe calls for a bulb of fennel, cored and chopped. I replaced the fennel with extra eggplant in this version, but you can substitute almost any roasting-friendly veggies!
