This recipe is from the Deceptively Delicious cookbook by Jessica Seinfeld. As a mom, one of my favorite cookbooks! My nutrition calcs are baed on Native Forest artichoke hearts, which are marinated, providing extra flavor. But, you can reduce fat and calories by substituting plain artichoke hearts.
This is an easy and satisfying recipe, can remove chicken if you'd like to go vegetarian. Adding a low fat cheese to the soup is also yummy just depends on how you like your soup. Good with or without chicken or cheese.
This is a winter salad that is absolutely delicious. I have decided even though I really am not fond of beets cooked, I really like them raw!

A lovely cold crab salad not made with pasta. I used crab we cleaned and then froze. Just defrost and drain off excess liquid before using. Have also done this with artificial crabmeat. Can toss in any other veggies you want, asparagus is really great!
Created this tasty soup using leftovers! I sprinkled Herbamare seasoning on mine at the table. Very good!
