Panzanella is an Italian salad made from stale bread and vegetables. My version has fresh zucchini, peppers, tomatoes and onions, plus tons of basil and parsley for flavor.
I found this recipe on the foodnetwork..and changed a couple of ingredients.. to lower fat and sodium.. Nice comfort food in the cold.. and very tasty..
in a large pot heat 3 tbsp. olive oil over high heat until simmering, add chopped onion and garlic, saute until golden, about 4min. Stir in tomatoe paste(1tbsp)ground cumin, kosher salt cayene(pinch) or chili powder and saute 2 min. longer. Add broth, chopped carrot and red lentils. Brinig to a simmer, then partially cover pot and turn heat to medium-low, simmer until lentils are soft(30min). Using an immersion or regular blender puree 1/2 of the soup and return to pot(should be chunky, I blend the entire recipe) to serve squeeze fresh lemon juice and top with chopped cilantro.
I add turkey sausage or kielbas(not in nutrition value) for a complete meal.
Mix all the ingredients in the crock pot, turn it on, go to work, and come home to a good hot meal and a house smelling like chili.
A very filling soup chock full of veggies. More (or less) can be added to your liking.
I also used a can of diced tomatoes with garlic. If you can't find that, add 1 clove chopped garlic.
I served this with whole wheat egg noodles.

Mix several hours ahead at a minimum. Heat the dressing before pouring over the salad speeds up the marinating process also

Red raspberries can be substituted for the strawberries. The lemon juice acts as a preservative so that the bananas don't turn brown.
