I threw this together after a party where I wound up with 2 platters of leftover raw vegetables. It can be adapted to whatever veggies you have available. It's low fat and low calorie but loaded with flavor and nutrition!
Cook pasta and rinse off with cold water.
Combined Sour Cream, Cottage Cheese, Mayo, Balsamic Vinegar and / or Red Wine Vinegar.
** I use the cottage cheese to help reduce calories, you can also use yogurt if you like.
Dice up Crab or Immitation Crab, Celery and Scallions.
Add Dill Weed I used 3 tbsp cause I love it but you can spice to taste.
Mix all ingreadients together and serve or refridgerate.
After serving add Hot sause to taste. I found it gave it an extra kick.
Feel free to ad any other veggies to this. I only used what I had on hand.
Serve in small pumpkins as bowls! Perfect for fall entertaining!

This lighter recipe of the well-known salad has all the true taste of a regular one, if not even better. Do not skip the anchovies and garlic, these are the main ingredients.
Healthy, high protein, easy to make recipe. I prefer to make this salad with pear and raw nuts, it gives it full fruity taste. The recipe was adapted from Oxygen May'09 magazine.
Quick and easy to whip up. Best made the day before. Leftover grilled baked potatoes are most flavorful.
