A little twist on traditional minestrone soup by adding Italian turkey sausage. This soup is great to make in late summer when fresh vegetables are plentiful at your local farmer's market.

1 celeriac (approx 700g clean weight, larger will yield more servings), diced
1 onion, chopped
Juice of 1/2 lemon
1/2 tbsp olive oil
Stock or stock pots, as required
I made my own vegetable stock so I'm not sure if the sodium is correct. I only used about 1 T. for 2 gallons of stock
This is real easy. I just used a whole tomato, onion, cucumber and bell pepper, on container of feta, olives and pasta, and 1 cup of the dressing. This isn't really meant to be optimal nutrition, just a recipe that I like, and if you try it, I hope you like it too. The nutrition is accurate per once of the measurements I've listed, but of course the next time they'll be off a bit, as no 2 pieces of fruit or veggie are exactly the same size :-). Enjoy!
Yummy French onion soup. Can be eaten with our without bread and mozzarella cheese.
Any combination of dried beans will work in this easy recipe. The ham bone from a honey glazed spiral sliced ham makes for a delicious broth.
a great summer appetizer (or skip the skewers and toss ingredients together as a salad. Watermelon gives a sweeter, milder flavor than tomato, and pairs well with the salty mozzarella (could also use feta) and balsamic vinegar.
A nice hearty soup for cold days. You can reduce the amount of sausage to 1/2lb and increase the lentils to 16oz if you prefer less meat.
