My grandma used to make these. I think the original recipe may have come from a cereal box because it uses All-Bran and Grapenuts. I've substituted applesauce for half of the margarine, and whole grain flours for half the white flour. You can substitute more, if you want, but this makes it taste very much like the original. You can also use Eggbeaters if you are watching cholesterol.
This recipe is from the Quaker Oats website, although I didn't use Quaker Oats :) It makes 4 servings; since there are only two of us, I like to freeze two individual portions in ziplock baggies to reheat later. I usually top with a few crushed pecans and a tiny bit of brown sugar. Enjoy!
I'm a traditionalist. I don't believe in defatted milk, or mechanically separated egg-type products. Give me food I recognize from the farm. So I understand this recipe is like many other recipes. I hope someone else, perhaps Paleo, might find use for it but me.
Organic is implicit, as possible.
(In retrospect, as I was eyeballing it when I wrote it down, I had way too much milk and v8 juice down. I thought portions were bigger than you thought, not smaller? *grin*)
THESE DO NOT USE CRACK - It's a joke! Great recipe - can sub 2 egg whites for whole egg to reduce fat (but only 4.5g/2 pancake serv.) Also can use low sodium baking powder as alternative for heart healthier diets. ENJOY!
