I often use left over veggies or whatever I have on hand such as substituting the broccli with asparagus or cooked spinich, cooked thinly sliced carrots, green peppers, onions, mushrooms, etc. You can add cooked bacon, breakfast sausage or deli ham and turkey if you want to make it meatier. I often do one with meat and one veggie only when I bring this to the office. If we have a potluck everyone asks "is Nancy bringing her quiche?"
