I used a gluten-free flour or rice flour instead of almond and coconut and still got great results. Add liquids slowly as my first batch was too runny and had to add more gf flour.
This quiche is a crowd pleaser and the recipe allows for lots of variations to please the pickiest of eaters. I often use left over veggies or whatever I have on hand such as substituting the broccli with asparagus or cooked spinich, cooked thinly sliced carrots, green peppers, onions, mushrooms, etc. You can add cooked bacon, breakfast sausage or deli ham and turkey if you want to make it meatier. I often do one with meat and one veggie only when I bring this to the office. If we have a potluck everyone asks "is Nancy bringing her quiche?"
if you prefer leave the salt out and use unsalted sunflower seeds. a serving is 1/4 cup
Mix together. Spray pan and place on stove at medium heat. Pour egg batter into pan,l. Flip when surface becomes firm. Remove from pan and eat.
This was my first attempt at quiche and was surprised that both my kids liked it! A great way to get them some veggies!
