I love spinach and bacon together, Oscar Mayer's center cut bacon is so low calorie I can put 2 pieces and still have enough flavor and the veggies make the omelet so filling.
I love mexican style eggs, especially because they're so light, and I add a slice of bacon because it doesn't add much calories and it makes it taste not so healthy. I normally make a burrito with this, but I didn't want to add the tortilla, because tortillas vary more than the other stuff

I needed to find something portable for breakfast that I could eat at work and was filling. My old breakfast consumed almost 500 calories. This is the only breakfast I have found under 300 calories that keeps me filled until lunch.

I enjoy mine plain with a cup of coffee. I usually prep the bread and have it ready in the baking pan the night before. I also prep the wet ingredients and store in the fridge overnight so that in the morning I can just throw the two together and pop it in the oven quickly.

I have a very small casserole dish 4"x 3" 1.5" high. This works for Keto and I run it in my little toaster oven at 425 for 30 mins
These are really tasty, you won't know that they don't have flour in them. Cook slowly and flip when you get a bunch a bubbles. Flip carefully

This is a spin on the traditional egg breakfast casserole using items I had in my fridge. Tat soi is a green very similar to spinach, but healthier for you!
This recipe usually calls for spinach, but I substituted with baby tat soi, an Asian leafy green that is very similar.
