This is the base for refrigerator oatmeal. I eat this for breakfast every morning. in addition to this base, I add 1 tablespoon of "mix-ins" it could be an combination of mini chocolate chips, slivered almond, pumpkin seed, honey, maple syrup, dried fruit, flavored extracts but the combination of whatever I choose does not exceed 1 tablespoon total. I tend to choose 3 items and add 1 tsp of each. Except for extracts, I only add 1/4tsp
I had this topped with some of my Better 'n Chocolate Pudding instead of syrup.....delicious!
The strawberries add enough bulk to make 10 generous sized muffins that are not even 115 calories each! They are also made with whole wheat flour, and without sugar, butter or oil, resulting in a delicious recipe that you couldn't feel guilty about if you tried.
If you do find that it isn't quite sweet enough, adding 1/4 cup sugar to the flour mixture in the beginning will only increase the calories to 133 per muffin. Enjoy!
Low Carb. Next time I will try lite sausage and all egg beaters as well as 2% cheese to lower calories.
