Can be assembled before hand as directed, then covered. Refrigerate several hours or overnight. When ready to serve, preheat oven to 350°F. Bake, uncovered, 1 hour or until knife inserted in center comes out clean.
This is the NI for entire batch because number of pancakes will be determined by the amount of water you use.

These came out a little too gooey, and the coconut oil has a slightly weird, but not bad, aftertaste.
After eating these up, I'm going to try using less fat and subbing butter or vegetable oil for half of it (Maybe 2T coconut oil 2T butter).
Or just more dry ingredients in general - more puffed grains (maybe wheat and/or kamut).
