This is a family favorite brunch dish that I used to make only for holidays. The original appeared in Gourmet April 1999; this is my modified version. I have a person who refuses to eat cheese, but others may want to add a little grated asiago.

Makes 6 1/4 cup servings that clock in under 10 cals. Good if you're on a diet or if you need maple syrup for a recipe but are out. Adapted from "Cooking Healthy, Fast & Superfast" by Rachel Rudel.
I know this seems high in calories but it will provide you with a big, complete breakfast that will keep you full for a long time. I put in the brands that I often use, because I know the nutritional info is right, but feel free to use whatever you like.

WORKS FOR ME
This recipe is inspired by Iron Chef Morimoto, and trust me: It is fantastic with beef, pork, and chicken. I have yet to try it with fish.
Special guests? Serve a lovely pot of Earl Grey Tea with tea sandwiches, scones and Creme Fraiche with strawberry preserves.
Bananas and Cherries are my favorite fruits. I mix in Chia seeds for the extra iron.

If you were looking for a stand alone Scone, this is it! More of a self-contained sweet biscuit this pastry is sure to please at tea parties or have for breakfast while doing a crossword! This is not a traditional scone of sorts but it is worth trying just the same!

So delicious! Uses processed sugar - can sub organic if needed or just omit the topping. Although then, these would not be "donut" muffins.
