I was looking for a less dense version of banana bread and found a recipe from Baking Illustrated that claimed to be lighter than average. I modified it to suit my taste (adding blueberries and cinnamon).
It's delicious! Lighter and softer than my old recipe, but still sweet and moist.
A delicious slightly eggy muffin -- decadent chocolate flavor at breakfast, without totally exceeding a reasonable carb count!
Suitable for Dukkan diet. Very versatile - can be pre-prepared and eaten for breakfast, or warm or cold as a dessert.
This is based on a recipe I originally found on the internet somewhere but I've cooked it many times now and its undergone a few changes.
Zucchini Banana Quinoa Flaxseed Muffins
Makes 24 mini muffins

Chop the apple and drop it into the freshly squeezed lime juice. Add the brockly-wokly or broccoli-cauliflower-carrot slaw and the sliced bell peppers. Toss. Then sprinkle freshly grated ginger root toss again. . I like almond slivers as a crouton style topping, and I like them toasted. The recipe will keep for 2-3 days if sealed and refrigerated.
This is a great between meal snack, a fab salad and dynamite topping for a broiled fish serving.
The filling here can be replaced with your favorite veggies and cheese, and you can increase the amount of quiche batter for larger pies using this simple equation: count 1/2 cup milk for every egg used. The recipe will also work in a prepared piecrust.
I got the basic recipe from Taste of Home. You are supposed to use 3 whole eggs and the 1 T is supposed to be lemon zest, but I never have lemon's on hand. I just use what I have. I reduced the sugar and I suppose you can use whatever sweetener you want. It's great on scones or with a plain cookie like macaroons.
Don't be afraid to try these because they're vegan! These are delicious and lighter than traditional banana bread or muffins. I serve them often to omni guests and family members, with many requests for seconds. As always, I don't bother to tell people they're veg*n!
Feel free to substitute dairy milk or any milk alternative (rice, almond, etc) for the soy milk. You may also increase the sugar to 3/4 cup, especially if your bananas aren't overly ripe.

I've been making this hearty breakfast for years with my leftover apples. I love the nutty crunch and the sweetness of the apples and raisins. You can adjust the amount of raisins/nuts/apples to your liking, but remember to account for it in the nutrition. Walnuts are a super food so I wouldn't change the type of nut. This makes two servings and with a glass of milk in the morning it will fill you up.
