I substituted the whole eggs for egg whites. You could also substitute the Canola Oil (10.65 tbs=2/3 c) with apple sauce or plain yogurt for an even healthier version. We made these at work and topped them with lo-cal syrup, bananas and walnuts. Delicious!

These are really good - not too sweet and without a doubt guilt-free!! I am not trying to sell the muffin that tastes as great as the full fat kind...they are good and they do the trick!!
Quck easy and healthy! Great way to up your daily fruit servings. Use any fruits you like (or hide that fruit you KNOW is good for you, but you just DON'T like that much in a yummy mix of fruits you LIKE)
