This is a recipe that I love to make, and that I modified so I can still eat it. Its easy and oh so yummy.
I got this recipe from Eat This Not That but they included chicken and I did not. You could also add as many vegetables as you want (onion, peppers, etc). I also left out jalapenos but if you want it spicier, you can add them back in.
Called a dump cake as all the ingredients are dumped in the same bowl and then mixed. A rich chocolate cake with a light and tangy glaze topping.
I changed this recipe to cut back on the calories and fat, just a little. If you don't have coffee powder, you can use finely ground coffee. Mix and match pudding and coffee flavors for variety. To cut even more calories, make your own graham cracker crust (this crust alone is 100 cals per serving)

Frozen Angel Delight and mixed berries makes a dessert similar to ice cream but with far fewer calories. It's so simple a small child can do it with relatively little help and it gets a portion of fruit into them in the guise of ice cream.
