low carb high protien ,pumpkin bread make four 9 x 5 loafs or about 96 mini muffins, I have not perfected the exact serving calculations yet but its about 3-4 net carbs per mini muffin.
The origional recipie came from the in side of the pumpkin puree lable but it was loaded with carbs (6 cups of flour and 6 cups of sugar I am sure it is tasty) but I have modified it to get rid of most of the flour and sugar and it is still very tasty even my kids love it.
Creamy and delicious -- not much more effort than making it from a box, but much yummier. Use lower-fat milk to lower calories, if desired.
You make this cake in a coffee cup!
It only takes 3 minutes in the microwave!
