A healthy snack that meets the sweet craving. You can't even tell it's made with chickpeas!
Sugarless, low carb, but really great tasting chocolatey, chewy brownie you can feel good about. Good source of fiber and protein with no flour! You can't taste the beans at all.
It's a wee bit finickier that your average bundt cake by gosh-oh-gee, is it worth it.
This is a really good smoothie for those nights that you are craving chocolate but not the calories.
I substituted brown sugar for the white and orange extract for the zest. I also only added 1.75 cups of canola oil and increased the baking time by 20 minutes.
You may use this with whatever fruit you like, experiment a little bit. Hungry Jenny called for cranberries, but I used cherries. I also changed her recipe into an individual serving and used ingredients I had on hand versus her ingredients (for example, she used grapeseed oil, not vegetable oil) and made it sweetener free versus just sugar free (you don't need it, the fruit sweetens it enough).
Delicious as breakfast or as a dessert.
My signature dessert made in a special pan from the Stabo store in Fargo, North Dakota. Always a hit!
This was from a cooking blog (Paris Baking?) and she adapted it from Alicia Silverstone's recipe, which had 1/4 t nutmeg. I could not find Safflower oil so subbed canola, and used dark brown sugar instead of maple sugar, wich is about $20 bucks a cup!
