OMG - this is AMAZING. Tastes just like "real" pudding only it's RAW, Nutritious and fast/easy to make. You can also freeze it and turn them into fudgesicles!

A Very easy recipe using items already in the pantry, minus the pumpkin. This recipe produces 12-18 muffins, depending on the size of your muffin tin. I usually use the entire can of pumpkin, rather than a cup.
This recipe was adapted from another, less healthy version. I substituted half healthier ingredients wherever possible. It turned out great and you don't notice the substitutions at all! If you want to make it even healthier, skip the chocolate chips and use Walnuts instead.
This recipe makes a soft cookie with just the right amount of "sweetness".

I sometimes make these for my family....but NOT very often. These are not light, by any means. Very indulgent!!!

These pumpkin bars are made with an oat crust with brown sugar and crumbly topping.
Quick, easy, and tasty! I use white wheat flour and unsalted butter. You can also prepare it in 8 oven safe ramekins on a foil lined baking sheet, for a neat presentation.
