I used to make this for my Dad as a kid and he loved it. It's so easy and quick - especially if using leftovers and quick-cooking rice. You don't have to stick to exact amounts and you can throw in extra veggies or sub chicken for the turkey.
This can be cooked on the stove or in a crock pot. It's delicious served over brown rice or basmati rice.
