This is a great sauce to serve over fish or pasta. I regularily serve oer broiled catfish or talapia. Being from Maryland I substitute the creole seasoning for Old Bay.
Baked tofu with a spicy red pepper sauce to be served cold. lasts in refrigerator for several days.
I eat and cook for just myself, you can multiply the ingredients proportionately for most any size family.
My neighbor gave me this awesome recipe that her grandfather used to make. It used regular pork sausage and way more cheese and butter. This is my low cal version. I serve it with 1/2 cup of cannelloni beans and I add those to my calorie count separately. You could cook them in the soup though and add them into the recipe. (My boyfriend won't eat the beans.)
Amazing, plain and simple. In this recipe beef is replaced with protein rich, low fat seitan (wheat gluten) and sour cream is replaced with tangy soy yogurt. Vegan, fish-free Worcestershire and a good red wine vinegar add richness of flavor. Serve over whole wheat pasta.
I love making this soup in the summer with fresh yellow squash from my garden, as well as runner beans, peas, an ear or two of corn cut from the cob, a few fresh carrots, etc. tasty, and full of good veggies. Yum!
Quick and easy. Make sure you use real peanut butter (ground peanuts, that's it), and limit the salt in the broth and chickpeas.
Don't let the name scare you. This is one of my husband's favourite foods of all, and it's chock full of vegetables, too!
