Adding cheese to the filling and on top is very tasty, but will bring up the calorie count, fat, etc. I made some each way the other night, and found that the ones without the cheese were just as good!
Low carb, lower fat version of My favorite comfort food, Chicken Florentine. I work nights, so making this in the slow cooker is ideal. I pop everything into the slow cooker when I get home from dropping off the kids at school and it cooks while I sleep so dinner is ready because the time I get back from picking them up from school in the afternoon.
Spices are adjustable to your liking! I usually have my taco filling on a bed of Romaine and the Family gets the taco shells. Save the cheese for last and you can avoid that too if you like!
This is one of my favorite dinners to make because it takes all of 30 minutes from start to stop and yet it tastes like it's taken all day! I've made it with pork also and is just as good that way! This is especially good for late summer/early fall when you are trying to figure out just what to do with all that zucchini in the garden!

I came up with this recipe when I went to a Mexican restaurant and my kids ate almost nothing of their meals. This has so much flavor, it's easy to be healthy and still have great taste! My kids' friends LOVE it!

I fixed it last night and it was very good, but I was a little to hot for me, I will make it againe but will put only 1/2 tsp. cayenne pepper in it.you don't have to use 2 pkg. but I like it better.
