This isn't authentic, but it's a really tasty casserole. I use tortilla chips for ease. ETA: Changed # of servings from 4 to 6. You could probably get even more with a salad and a side dish.

This is a simple alternative to the traditional cabbage rolls. It's an easy one pot favorite in my house. Add a salad and you have a complete and healthy meal.
Easy, and healthy if you use less cheese than I did. EXTREMELY tasty! These microwave very well and any leftover sauce can be refrigerated and used later. Sauce and enchiladas can also have jalapenos, chili powder to spice them up or other veggies. I used a couple baby carrots, for color and a little flavor- YUM!!!!!!!!!
This is an incredible easy stuffing. Hint when you order your bread ask them to chunk it for you.
You can easily add fruit such as cranberries, raisins or apples.

Definitely use the lite sausage when you make this!! I learned my lesson!! Very tasty, but very high in fat when using regular smoked sausage.

Mildly spicy and full of flavour. Incredibly easy to prepare! The whole family loves it. It made enough for a family of four to eat for two dinners and there was still a bit left over to make tortilla soup. The adults had it on salad dressed with lime juice and salsa, the kids had it in tortillas.
Very quick to make meal that looks fancy, taste like it took hours, and cost very little. This will make 2 generous servings (only 612 calories each) or 4 smaller servings (a mere 306 calories each)
