A quick simple microwave meal. This has become one of my favorite dishes. Sometimes I use a yam instead.
A great way to use up left-over rice sitting in the refrigerator! A few of the ingredients I've used here are not exactly 'traditional', but in the end it tastes wonderful! :) I've worded the ingredient list with generic measurements, but I also weighed my ingredients, and used those to calculate the nutritional information. This is a favourite in my house. It may sound weird but it is really good. We eat it for dinner, but it would be good for brunch.

This is a recipe I got from a friend and then toned it down some. She used a LOT more butter and definitely no fat-free or light items.
Here in Alaska, we find our chest freezer bursting with halibut and salmon. This is my favorite way to eat my halibut. The sauce is great as a dip as well. Especially yummy with bell peppers.
Found myself alone this weekend and decided to get a bit creative. Came up with this on a whim after looking through ingredients I had on hand. Easy to make, Easy to clean up and VERY yummy! I have enough to eat this for the next few days too since its only me and the filet was so big.

6 Points. We gave our creole extra sizzle by using hot, smoked Spanish paprika. If you can't find it, use ground, smoked chili powder instead.
Remember - even though it's 400 calories, it's a FULL meal, including the fish, potatoes, and green beans. Not too shabby. :)
