I keep the recipe Gluten-free by using Balsamic vinegar and Bob's Redmill Gluten-free oats; but if avoiding gluten is of no concern to you, feel free to substitute your favorite oatmeal or even breadcrumbs, and for a more traditional flavor you can use worcestershire sauce instead of balsamic vinegar.
