If you get tired of Lentils, add beans instead! Great source of Protein and low fat!
A malaysian and singaporean soup with noodles. Use a light coconut milk and plenty of fresh cilantro. feel free to replace the chicken with tofu to make it vegetarian.
Boil all the vegetables including potatoes and mash together. Add onions, red chilli powder and salt. Add coriander. Mix bread crumbs into the potatoes and vegetables.
Make patties out of the mixture and roll in bread crumbs to coat.
Ina shallow pan spray oilve oil or canola oil and fry the patties until golden brown.
This can be eaten as a snack or for Brunch with a nice peice of wheat bread and ketchup.
Golden-brown scallops are gorgeous when framed by a bright pea purée. An infusion of curry and lime juice invigorates this dish.

A lower-calorie, non-traditional twist on the warm Indian curry - but delicious nonetheless. This recipe uses eggplant cubes and a saucier tomato base to thin out the density of chickpeas, while still providing that tart-and-spicy heartiness unique to chana masala. Served with crispy tofu slices, it's vegan friendly, but it will please the omnivores, too.

It's usually made in a tandoor oven, a clay oven that can reach up to 900 degrees F! That's hard to replicate at home, but this version comes pretty darned close.
This would be great with some naan or jasmine rice. I eat it by itself, though.
