Mostly from the Trader Joe's cookbook, but changing some of the veggies to our favorites and adding chicken. Veggies can be changed and chicken left out, it's all about the sauce!
A take on a traditional chicken curry recipe from the Bene Israel Jewish community in India, without the traditional oil used to fry. Wonderful flavors of cilantro, garlic and tomato.

I made this from a Gits Mix, which you can get at an Indian market or in the International section of a large supermarket. Normally, these are made on a special pan, called a Tava, but I do them in a smaller size on a hot, non-stick pan. You do need to spray the pan with oil between each pancake, about 1/4 tsp, or they will stick irregardless of the nonstick pan.
These are lentil and rice flour, so no wheat and ideal for those who don't eat it.
Serve this thick, hearty stew over rice for a wonderful play on the traditional Indian dish Chole, or Chana Masala. I've taken the standard chickpea curry and lightened it up with playful spices and a chunkier, rather than soupy constitution (think pico de gallo vs. picante sauce).
Not authentic, but VERY tasty! One serving of this usually makes a meal for me.
Going to the authentic Indian restaurant and trying this dish for the first time, I did not taste any tomatoes in it, but I tasted a lot of sweet and savory spices. This came really close to it. Hooray for tastebuds!
A nice, delicious, easy way to make coconut chicken curry at home. The best way to cook this is in a slowcooker or crockpot.
